Barone Pizzini Perlugo is a refined Italian sparkling wine from the Marche region, crafted using the traditional metodo classico (champenoise) by Pievalta, the Barone Pizzini estate in Castelli di Jesi. Made from 100% biodynamically grown Verdicchio and bottled as a non-vintage dosaggio zero (no dosage), it delivers a pure, incisive expression of grape and place. With extended lees aging and a resolutely dry style, Perlugo showcases the mineral backbone and elegance that have made Verdicchio one of Italy’s most intriguing white varieties.

Tasting Notes
In the glass, Perlugo shows a bright straw-yellow hue with fine, persistent bubbles that form a delicate mousse. The nose is clean and expressive, opening with citrus notes of lemon zest and grapefruit, followed by white flowers, fresh almonds and a subtle saline-mineral edge. Hints of aromatic herbs and a gentle bread-crust nuance from the lees aging add complexity without ever feeling heavy. On the palate, this is crisp, bone-dry and focused, with a racy yet beautifully balanced acidity that keeps the wine lifted and energetic. Flavours of citrus, green apple, wild herbs and crunchy almond glide over a creamy, finely textured mousse, leading to a long, linear and mouthwatering finish marked by chalky minerality and a light, nutty undertone. Thanks to its 24 months of bottle aging on the lees and zero dosage, Perlugo drinks beautifully on release but can develop further complexity over 3–5 years, gaining more savory and toasty notes while retaining its structure.

Production
Perlugo is sourced from biodynamically farmed Verdicchio vineyards in the heart of Marche, where hillside exposures, calcareous-clay soils and maritime breezes create ideal conditions for vibrant, mineral-driven wines. Grapes are harvested by hand to ensure optimal ripeness and careful selection in the vineyard. Fermentation takes place in temperature-controlled tanks to preserve freshness and varietal purity, after which the base wine undergoes a second fermentation in bottle following the metodo classico. The wine then rests on its lees for a minimum of 24 months before disgorgement, and no dosage is added (dosaggio zero), resulting in a pure, terroir-driven sparkling wine that highlights Verdicchio’s natural tension and salinity.

Food & Serving
Perlugo is a versatile food wine, particularly suited to delicate, refined dishes. It pairs beautifully with sushi and sashimi, oysters, prawns, and mixed shellfish, as well as lightly sauced fish, crudo and ceviche. Its crisp acidity and dry profile also complement simple pasta dishes with vegetables or seafood, as well as mild, soft cheeses and fresh goat cheese. Serve well-chilled at 8–10 °C; a quick 10–15 minutes in an ice bucket is ideal. Decanting is not necessary, but opening the bottle a few minutes before serving in white wine or tulip-shaped sparkling glasses will allow the aromas and texture to fully unfold.

Barone Pizzini is one of Italy’s pioneering organic and biodynamic producers, best known for its acclaimed Franciacorta and for its forward-thinking approach to sustainability. The Pievalta estate in Marche, from which Perlugo is produced, was the first winery in the Castelli di Jesi area to be certified organic and later biodynamic, helping to elevate Verdicchio’s reputation from a simple local white to a world-class, terroir-expressive grape. Combining meticulous vineyard work with traditional metodo classico know-how, Barone Pizzini and Pievalta have earned a strong reputation among critics and enthusiasts alike for their elegant, precise and environmentally responsible wines that faithfully reflect their regions of origin.
