Ausone 2004 is a benchmark Saint-Émilion Premier Grand Cru Classé ‘A’, crafted from one of Bordeaux’s most revered limestone slopes. In a classic, structured vintage like 2004, Ausone marries concentration and finesse, offering a wine of immense depth that remains remarkably light on its feet. Long considered one of the stars of the Right Bank, this vintage is often cited—alongside Petrus—as one of the longest-lived wines of the year.

Tasting Notes
In the glass, Ausone 2004 shows a deep, opaque purple core with a slight garnet rim beginning to emerge, hinting at its slow, graceful evolution. The nose is haunting and complex, opening with layers of blue and black fruits—blackberry, blueberry and blackcurrant—woven with notes of violets, crushed rock, graphite, incense and a touch of smoky cedar and spice. On the palate, the wine is powerful yet poised, with an almost weightless intensity that is very much a signature of Ausone’s limestone terroir. Dense, pure fruit is framed by ultra-fine but firm tannins, with flavors of dark plum, black cherry, licorice, mineral and subtle tobacco leaf unfolding in slow, precise layers. The acidity is vibrant, giving lift and tension to the long, resonant finish. While accessible to experienced tasters now after long aeration, this 2004 is still on an upward trajectory and has substantial aging potential; stored well, it can easily continue to develop for 30–40 years from the vintage, gaining even more nuance and tertiary complexity.

Production
Château Ausone sits on a steep, terraced limestone and clay hillside just outside the town of Saint-Émilion, an exceptional terroir that combines thin topsoils with solid limestone bedrock and superb drainage. The 2004 blend is predominantly Cabernet Franc with a significant proportion of Merlot, all from old vines that produce naturally low yields of intensely flavored grapes. Harvest is carried out entirely by hand, with rigorous sorting in the vineyard and again at the winery to ensure only perfect berries are used. Fermentation takes place in temperature-controlled vats, followed by élevage in a high proportion of new French oak barriques, where the wine matures on its fine lees to gain texture, polish and complexity before bottling at the château.

Food & Serving
Ausone 2004 is a superb partner for refined, flavorful dishes such as roast lamb with rosemary, pigeon or duck, beef tenderloin with truffle jus, or veal with morel mushrooms. It also pairs beautifully with aged hard cheeses like Comté or mature Gouda, and with earthy dishes based on wild mushrooms or truffles. Serve at 16–18°C (60–64°F) in large Bordeaux stems to allow the aromatics to unfold. Decanting is highly recommended—2 to 3 hours for bottles opened now, and potentially longer for those coming from very cool, undisturbed cellars—to let the wine fully express its aromatic complexity and silky texture.
