Le Monts de la Vallée Rosé Extra Brut is sourced from carefully selected Pinot Noir parcels in the Champagne region, where cool climate and chalk-influenced soils help preserve acidity and finesse. Grapes are picked by hand at optimal ripeness to protect the fruit’s delicacy and ensure strict selection in the vineyard. In the cellar, Antoine Bouvet follows a low-intervention, terroir-focused approach: gentle pressing, controlled fermentation, and thoughtful blending of still base wines, with a portion of red Pinot Noir wine added to achieve both colour and aromatic depth. The wine then undergoes secondary fermentation in bottle and ages on its lees to build texture and complexity before a very low dosage is added to preserve its Extra Brut, incisive style.
