Tasting Notes
In the glass, the 2021 Ciabot San Giorgio Riserva shows a luminous garnet color with brick reflections at the rim, typical of well-crafted Nebbiolo. The nose is inviting and layered, with notes of ripe red cherry, wild strawberry, and rose petals, followed by hints of violets, dried herbs, sweet spices, licorice, and a touch of earthy minerality.
On the palate, this is a medium to full-bodied Roero with finely etched tannins and a vibrant, mouthwatering acidity. Flavors of red cherry, raspberry, and cranberry are interwoven with notes of orange zest, tobacco, subtle tar, and savory spice. The tannic structure is firm yet polished, promising excellent development in bottle. While already approachable with a brief aeration, the 2021 has the freshness and grip to age gracefully for 8–12 years from vintage, gaining tertiary notes of leather, truffle, and dried flowers over time.
Production
The fruit for Ciabot San Giorgio Riserva comes from selected Roero vineyards characterized by sandy, calcareous soils that lend Nebbiolo its aromatic lift and silky tannin profile. The rolling hills benefit from good diurnal temperature variation, preserving acidity and finesse in the grapes. Grapes are typically harvested by hand to ensure careful selection of bunches at optimal ripeness. In the cellar, a traditional yet carefully controlled vinification is employed: extended maceration on the skins to extract color and tannins, followed by maturation in wood—often a combination of large casks and/or well-integrated barrels—to refine structure without overpowering the varietal character. The extended aging required for Riserva status allows the wine to knit together, adding depth, complexity, and a long, harmonious finish.
Food & Serving
This Roero Riserva is a natural match for classic Piemontese dishes such as tajarin with meat ragù, braised veal, or agnolotti del plin. It also pairs beautifully with roasted lamb, game birds, mushroom risotto, truffle-based dishes, and aged hard cheeses like Parmigiano Reggiano or mature Castelmagno. Serve at 16–18°C (60–64°F) in large Burgundy or Nebbiolo glasses to highlight its aromatics. Young bottles will benefit from 1–2 hours in a decanter, while more mature examples can be opened and gently aerated in the glass.
