André Beaufort Champagne Polisy Grande Réserve Brut Millésime 2006 is a characterful, vintage Champagne from one of the region’s most individualistic grower-producers. Crafted from Chardonnay, Pinot Meunier and Pinot Noir, it offers a complex, mature profile that reflects both the great 2006 harvest and Beaufort’s singular, low-intervention philosophy. This is not a mass‑market Champagne, but a carefully tended, long‑aged cuvée for those who appreciate depth, nuance and authenticity in the glass.

Tasting Notes
In the glass, the 2006 Polisy Grande Réserve shows a deep lemon-gold hue with fine, persistent bubbles, a visual clue to its extended aging and maturity. On the nose, it opens with layers of baked apple, ripe pear and candied citrus peel, supported by brioche, toasted hazelnut and hints of honey and dried flowers. Subtle notes of chalk, pastry cream and gentle spice emerge with air, giving an impression of both richness and elegance. On the palate, this Champagne is full-flavoured yet finely structured, with a creamy mousse wrapped around a core of mature orchard fruits, preserved lemon and stone fruit. The Chardonnay contributes lift and tension, while Pinot Meunier and Pinot Noir bring flesh, red-fruit nuance and a slight vinous depth. Secondary and tertiary notes—biscuit, almond, a touch of nougat and a saline, chalky finish—speak clearly of bottle age and terroir. At this point, the 2006 is beautifully evolved and in a prime drinking window, with the structure to hold a few more years for those who enjoy more pronounced tertiary complexity.

Production
Sourced from vineyards around Polisy in the southern reaches of Champagne, this cuvée reflects the cooler climate and limestone-rich soils of the region, which lend tension and a distinctive mineral line to the wine. André Beaufort is known for organic, low‑input viticulture, favoring meticulous hand work in the vineyard and hand harvesting at optimal ripeness to ensure healthy, concentrated grapes. In the cellar, traditional Champagne methods are followed with Beaufort’s hallmark minimal intervention: gentle pressing, fermentations that may rely partly on native yeasts, and extended aging on the lees to develop texture and complexity. The result is a vintage Brut that captures both the character of the 2006 season and the singular expression of Polisy’s terroir.

Food & Serving
This mature Champagne is ideal at the table, pairing beautifully with rich seafood dishes such as scallops in butter, lobster, turbot, or halibut with a cream sauce, as well as poultry like roast chicken or guinea fowl with morels. It also works well alongside aged hard cheeses, mushroom risotto, and refined charcuterie. Serve well-chilled but not icy, around 10–12°C (50–54°F), to allow the layers of aroma to open fully. A gentle decanting in a wide-bottomed carafe for 15–20 minutes, or simply pouring the first glass and giving the bottle a little time in the glass, can help the wine reveal its mature complexity.
