This single-vintage cuvée marries old-school craftsmanship with a distinctly artisanal, low-intervention approach, resulting in a wine of depth, purity and nuance. Sourced from vineyards literally “behind the church” in Ambonnay, it offers a sense of place that fans of terroir-driven Champagne will recognize immediately.

Tasting Notes
In the glass, this 2015 Brut Millésime shows a luminous golden hue with fine, persistent bubbles that form a delicate mousse. On the nose, it is expressive and complex, revealing ripe orchard fruit (baked apple, pear), red berry hints from the Pinot Noir core, and layers of brioche, toasted hazelnut, citrus zest and subtle floral notes, with a whisper of chalk and spice. The palate is both generous and precise, with a winegrower’s balance of ripeness and tension. Juicy stone and orchard fruit are wrapped in a creamy texture, supported by vibrant acidity and a well-integrated, vinous structure from the Pinot Noir. The finish is long, savory and mineral, with lingering notes of citrus peel, pastry and saline chalk. 2015 is a ripe, structured vintage with the concentration to age gracefully; this Champagne can easily evolve over 8–12 years from vintage, gaining more honeyed, nutty complexity and deeper tertiary nuances while retaining its backbone.

Production
Derrière l’Eglise comes from organically farmed Pinot Noir vines rooted in the chalk-rich slopes of Ambonnay, one of Champagne’s great Grand Cru villages. The Beaufort family has long worked their vineyards without synthetic chemicals, favoring low yields and careful canopy management to achieve optimal ripeness and terroir expression. Harvest is done by hand, with strict selection of bunches in the vineyard and at the press. In the cellar, André Beaufort is known for minimal-intervention winemaking, often fermenting with indigenous yeasts and working gently to preserve the wine’s natural energy. The base wines are typically vinified in a mix of vessels (often including older barrels) to add texture and complexity, then aged on the lees in bottle for extended periods before disgorgement. Dosage is kept in balance with the vintage character, emphasizing the depth and chalky precision of Ambonnay Pinot Noir.

Food & Serving
This Champagne’s vinous, Pinot Noir-driven profile makes it highly versatile at the table. It pairs beautifully with rich seafood dishes such as lobster with butter, scallops, or turbot, as well as roasted poultry, guinea fowl, veal in cream sauce, or mushroom risotto. Charcuterie, aged Comté or Gruyère, and lightly truffled dishes are also excellent matches for its depth and savory minerality. Serve well-chilled but not too cold, ideally around 10–12°C (50–54°F), to allow the aromas to fully open. A short decant in a carafe or serving in a larger white-wine-style glass can help the wine express its full aromatic complexity, especially if enjoyed within a few years of disgorgement.
