The vineyards, cultivated with great respect for the environment, are largely worked by hand due to the incline, ensuring careful selection of healthy, optimally ripe grapes at harvest. After manual picking, the fruit is sorted, then traditionally vinified—typically with destemming or a balanced use of whole clusters depending on the vintage—followed by a maceration that extracts color, aroma, and fine tannins without harshness. The wine is then aged in French oak (often a mix of older barrels to avoid excessive wood imprint) to round the texture and knit the flavors, resulting in a polished, approachable style that remains true to its granite origins.
