Tasting Notes
In the glass, the 2020 Cornas Chailles shows a deep, shining ruby hue that hints at its intensity and concentration. The nose is lively and perfumed, opening with smoky dark berries and candied violet notes, layered with black olive, licorice, and a whisper of baking spices. As it breathes, subtle floral tones and a graphite-like minerality emerge, adding refinement to its savory core.
On the palate, the wine is juicy, penetrating and sinewy, with impeccably defined flavors of blackberry, cherry-cola and dark plum framed by spice and a stony lift. The texture is both polished and energetic, with fine-grained tannins that build steadily without ever feeling harsh. The finish is long, floral and mouth-coating, driven by vibrant acidity and a distinct mineral line. Enjoyable now after a good decant, this 2020 has the structure and balance to evolve beautifully over 10–15 years, gaining complexity and softness with time in the cellar.
Production
Cornas Chailles is sourced from classic Cornas terroir: steep, sun-exposed hillsides of decomposed granite (locally called “chailles”) that naturally limit yields and intensify flavor. Vines are worked and harvested by hand due to the dramatic slopes, with careful sorting in the vineyard and again at the winery to ensure only perfectly ripe Syrah is used. In 2020, around 20% whole clusters were included in the fermentation, adding aromatic lift and structural complexity. Vinification takes place in temperature-controlled vats with gentle extraction to preserve fruit purity and finesse, followed by maturation in carefully selected oak (mostly used barrels and larger vessels) to polish the tannins without masking the wine’s distinctive Cornas identity.
Food & Serving
This is a superb wine for hearty, flavorful dishes: think roast lamb with herbs, grilled ribeye, game birds, slow-cooked beef cheeks, or sausages with lentils. It also pairs beautifully with mushroom dishes, braised short ribs, and aged hard cheeses like Comté or matured cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and freshness. Decanting is recommended—about 1–2 hours for current drinking—to allow the tannins to soften and the floral and spicy notes to fully unfold.
