The terroir combines excellent drainage with good sun exposure, allowing Chardonnay to ripen slowly while preserving acidity and minerality. Grapes are typically harvested by hand at optimal ripeness to ensure careful selection and intact fruit. In the cellar, Alain Geoffroy follows a traditional, terroir-focused approach: gentle pressing, cool temperature-controlled fermentation in stainless steel, and aging on fine lees to build texture and complexity without overwhelming the wine with oak. The result is a precise, authentic Chablis that lets the vineyard speak clearly.

This Chablis 1er Cru Fourchaume is an ideal partner for classic seafood dishes such as oysters, scallops, shrimp, and grilled or poached white fish. It also pairs beautifully with sushi, ceviche, steamed mussels, and delicately prepared poultry, as well as goat cheese or mild, creamy cow’s milk cheeses. Serve well-chilled but not icy, around 10–12°C (50–54°F), to allow its aromas and minerality to fully express themselves. Decanting is not essential, but pouring the wine into a carafe 20–30 minutes before serving can help open up the bouquet, especially in its first few years.
