AdamsWein Weißburgunder Ingelheim Bio 2024 is a characterful, organically crafted Pinot Blanc from the limestone-rich slopes around Ingelheim in Rheinhessen. Far from a simple, fruit-driven white, it emphasizes spice, herbs and mineral tension over easy-going primary fruit. This is a structured, gastronomic Weißburgunder that showcases the precision and finesse for which Simone Adams and her small estate are increasingly renowned in Germany.

Tasting Notes
In the glass, this Pinot Blanc shows a pale straw to light lemon color with greenish reflections, signaling freshness and youth. The nose opens with a fragrant, floral lift, underpinned by notes of fresh spring herbs, green walnut and a gentle, smoky-spicy nuance. Ripe pear, citrus zest and a hint of white peach are present, but they play a supporting role to the more savory, herbal and nutty aromatics. On the palate, the wine is finely textured with a subtle creaminess up front that quickly gives way to a striking mineral salinity and a precise, linear acidity. The citrus and pear fruit are tightly woven into a framework of herbal notes, a touch of phenolic grip and a delicate, smoky, almost flinty spice on the finish. It is decidedly dry, with no perceptible residual sweetness, and shows impressive structure and tension for Pinot Blanc. Enjoy it now for its freshness and vibrancy; over the next 2–4 years it should gain additional complexity, with the herbal and nutty components becoming more pronounced.

Production
The grapes for AdamsWein Weißburgunder Ingelheim Bio 2024 come from organically farmed vineyards around Ingelheim, where calcareous, limestone-rich soils lend the wines a distinctive, chalky mineral backbone. Yields are kept moderate to ensure concentration, and harvesting is typically done by hand to allow an exacting selection of healthy, optimally ripe fruit. In the cellar, the grapes are gently pressed and the must is allowed to ferment slowly, predominantly in stainless steel and possibly with a portion in neutral large oak to build texture without overt wood flavors. A careful élevage on the fine lees enhances the wine’s creaminess and complexity while preserving its clarity, freshness and terroir expression.

Food & Serving
This structured, savory-leaning Pinot Blanc is an excellent partner for refined yet uncomplicated cuisine. Try it with freshwater fish, simply grilled or pan-fried, dishes featuring asparagus or green vegetables, herbed roast chicken, veal in light cream sauces, or mild goat and cow’s milk cheeses. Its herbal and nutty notes also complement dishes with spring herbs, white asparagus, or mushroom-based preparations. Serve well-chilled but not ice-cold, ideally around 9–11 °C, to let the aromas unfold. Decanting is not essential, but a brief time in the glass will help the wine open up and reveal its full aromatic spectrum.

By working gently in the vineyard and the cellar, and by emphasizing balance, texture and minerality over simple fruitiness, AdamsWein has become one of the exciting modern voices in the region, helping to redefine what Rheinhessen Pinot varieties—both red and white—can achieve.
