AdamsWein Spätburgunder Pares 2021 is a precise, terroir-driven Pinot Noir from one of Ingelheim’s most celebrated vineyard sites. Crafted by Simone Adams, it marks a clear shift away from generic varietal bottlings toward an intense focus on single-vineyard character and origin. The Pares site has long been considered a “parade” vineyard in Ingelheim, and this bottling captures its pedigree with depth, structure and remarkable finesse.
Tasting Notes
In the glass, the 2021 Pares Spätburgunder shows a luminous, translucent ruby-red color with a delicate, almost burgundy-like brightness at the rim. The nose is refined and layered, offering notes of wild raspberry, red cherry and pomegranate alongside rose petals, crushed herbs, dried orange peel and subtle hints of smoke and sweet spice from its time in barrique.
On the palate, the wine is taut, elegant and finely structured rather than opulent, with a cool-climate clarity that reflects its Rheinhessen origins. Juicy red berry fruit is interwoven with savory tones—dried herbs, tea leaf, a touch of forest floor and a gentle, finely grained tannin grip contributed by the whole-cluster fermentation. The 18 months in barrel add texture and discreet notes of vanilla pod, toasted spice and cedar without overwhelming the fruit. Acidity is vibrant and linear, giving the wine lift and length, and the finish is long, saline and precise. While already approachable with some aeration, this 2021 has clear aging potential; expect it to evolve beautifully over 8–12 years, gaining complexity, silkier tannins and more pronounced tertiary notes of truffle, sous-bois and dried flowers.
Production
The Pares vineyard in Ingelheim is regarded as a benchmark site, marked by calcareous, often limestone-rich soils that naturally favor Pinot Noir, giving tension, minerality and aromatic lift. For this wine, the Spätburgunder grapes were harvested by hand at optimal ripeness, with careful selection to ensure only healthy, perfectly mature bunches entered the cellar. Simone Adams chose 100% whole-cluster fermentation, including the stems, which were fully lignified; this approach boosts structure, adds aromatic complexity and deepens the tannin framework in a variety with naturally thinner skins like Pinot Noir. The must was spontaneously fermented with indigenous yeasts, allowing the character of the vineyard and vintage to express itself without the imprint of selected cultures. After the slow, natural fermentation, the young wine was aged for 18 months in barriques, where it could clarify, integrate its tannins and gently take on nuance from the oak, before being bottled with a focus on preserving purity and place.
Food & Serving
This is a versatile, gastronomic Spätburgunder that shines with refined yet characterful dishes. It pairs beautifully with roast duck or goose, herb-crusted lamb, veal chops, or game birds such as partridge and pheasant. On the lighter side, try it with mushroom-based dishes, truffle pasta, beetroot risotto, or matured, semi-soft cheeses. Serve at 14–16 °C to highlight its aromatics and finely etched structure; if served too warm it may lose some of its precision and freshness. Decanting for 45–60 minutes in its youth is recommended to allow the whole-cluster character and oak to fully integrate and the bouquet to open up, especially if you’re drinking it within the first few years after release.
