Abbazia di Novacella Omnes Dies 2025 is a fresh, fruit-driven white wine from Alto Adige, shaped by one of Italy’s most historic wine estates. The blend of Kerner, Moscato Giallo, and Müller-Thurgau gives it a lively, aromatic profile with a distinctly mountain-grown character and an easy, polished style.
Tasting Notes
Pale straw in the glass with bright greenish reflections, it opens with expressive aromas of peach, citrus zest, and a delicate touch of musk and spice. On the palate it is crisp yet rounded, combining juicy fruit, fine freshness, and a subtle savory edge that keeps it lively and balanced.
Its clean structure and vibrant acidity make it enjoyable young, though it has enough shape and depth to hold for a short period in bottle while retaining its aromatic clarity.
Production
Produced on the steep slopes of the Isarco Valley near Varna, at elevations between 700 and 900 meters, this wine reflects the cool alpine conditions of Bressanone’s northern edge. The vineyards are rooted in gravel, silt, and sand soils, with southern and south-facing exposures that help ripen the grapes slowly in a demanding mountain climate.
Harvesting is carried out carefully to select only the best bunches. Fermentation takes place in stainless steel tanks under controlled temperatures, followed by six months of maturation in the same vessels, with no oak influence, to preserve freshness, purity, and the wine’s vivid fruit expression.
Food & Serving
A versatile white wine, Omnes Dies pairs well with light pasta dishes, white meats, fish, seafood, fresh cheeses, and vegetable-based appetizers. Serve chilled at around 8–10°C; decanting is not necessary.
