The nose is fresh and inviting, offering notes of green apple, pear and white peach, layered with hints of citrus zest, white flowers and subtle brioche and biscuit tones from extended lees aging.
On the palate, it is dry, lively and finely textured, with a creamy mousse that carries flavors of crisp orchard fruit, lemon curd and a touch of almond. Production
Abate Nero Brut is born in Trentino Alto Adige, where vineyards sit at altitude on well-drained, predominantly calcareous and morainic soils, benefiting from strong day–night temperature swings that preserve acidity and aromatic precision in Chardonnay. Grapes are typically harvested by hand at optimal ripeness to retain freshness and balance, then gently pressed to obtain the purest free-run juice. The base wine is vinified in stainless steel to protect its delicate fruit profile, followed by a second fermentation in the bottle using the traditional method. The wine then rests sur lie for an extended period, allowing the fine lees to contribute structure, complexity and that signature finesse before disgorgement and dosage.
Food & Serving
This Brut Magnum is a versatile sparkling wine that shines as an aperitif and at the table. It pairs beautifully with oysters, shellfish platters, sushi and sashimi, as well as delicate fish dishes, tempura, light risottos and fresh goat’s cheese or soft-rind cheeses. It also complements antipasti, prosciutto and vegetable-based starters. Serve well chilled at around 6–8°C (43–46°F). Decanting is not necessary, but opening the bottle a few minutes before serving and using proper sparkling wine glasses or tulip-shaped flutes will enhance its aromatic complexity and mousse.
