Production
Saint Clair sources the grapes for the Marlborough Origin range from selected vineyards across Marlborough, including cooler subregions that enhance aromatic lift and natural acidity. The region’s free-draining alluvial soils, abundant sunshine and cool nights help produce grapes with concentrated flavors and crisp structure. Grapes are typically harvested during the cool of the night to preserve freshness, then quickly transported to the winery for gentle pressing. Fermentation takes place in stainless steel at low temperatures using selected yeasts to accentuate pure fruit and varietal character, with the wine kept on fine lees for a short period to add texture and balance without compromising its bright, aromatic profile.
Food & Serving
This Sauvignon Blanc is a natural partner for seafood—think freshly shucked oysters, prawns, ceviche or grilled fish with citrus and herbs. It also works beautifully with goat’s cheese salads, sushi, Vietnamese or Thai dishes with fresh herbs, and vegetable-based starters such as asparagus, peas or grilled zucchini. Serve well-chilled at about 8–10°C (46–50°F) to highlight its freshness and aromatics.
