Tasting Notes
In the glass, Montenovo Godello typically shows a pale straw to light lemon color with greenish highlights, reflecting its youth and freshness. The nose is clean and expressive, with aromas of lemon zest, green apple, pear and white peach layered over hints of fennel, white flowers and a distinct wet-stone minerality. On the palate, it is crisp, medium-bodied and finely textured, balancing ripe stone and citrus fruit with a saline, almost chalky edge that speaks clearly of Valdeorras slate. Expect flavors of lime, orchard fruits and subtle herbal notes, wrapped in a refreshing acidity that keeps everything focused and mouthwatering. The finish is long for a wine in this style, with lingering citrus and mineral notes. While Montenovo is made to be enjoyed young for its energy and aromatics (within 1–3 years of the vintage), it has enough structure and concentration to develop a bit more complexity over short-term cellaring.

Production
Valdesil’s Montenovo is sourced from Godello vineyards in Valdeorras, a cool, inland Galician appellation where steep, terraced sites and slate- and granite-based soils give the wines their hallmark minerality and tension. The climate combines continental influences with Atlantic freshness, allowing for slow, even ripening and excellent natural acidity. Grapes are typically hand-harvested to preserve berry integrity and brought quickly to the cellar, where they are gently pressed. Fermentation takes place in temperature-controlled stainless steel tanks to safeguard the grape’s delicate aromatics and pure fruit profile, usually followed by a short period on fine lees to add texture and subtle complexity without the influence of oak.

Food & Serving
This Godello is a natural partner for seafood of all kinds—think simply grilled white fish, oysters, clams, mussels or classic Galician dishes like pulpo a la gallega (octopus with paprika and olive oil). It also works beautifully with sushi, ceviche, fresh goat cheeses, vegetable-based tapas and light pasta dishes with herbs, lemon or shellfish. Serve well chilled but not icy, ideally around 8–10°C (46–50°F), to let the aromas fully open. Decanting is not necessary; a quick swirl in the glass is enough for the wine to reveal its fresh, mineral character.
