Tasting Notes
In the glass, this Auslese typically shows a pale straw to light lemon color with youthful green reflections, indicating both its freshness and its cool-climate origins. The nose is detailed and complex: expect a lifted bouquet of white peach, ripe pear, and golden apple, layered with notes of lime zest, white flowers, crushed slate, and a hint of honeycomb and herbs. With air, more exotic nuances often emerge—think passion fruit, pineapple, and delicate citrus blossom. On the palate, the 2024 Graacher Himmelreich Auslese should be medium to full in sweetness, perfectly counterbalanced by vivid, mouthwatering acidity. Flavors of stone fruit, citrus oil, and candied lime peel glide over a tightly woven spine of minerality, evoking wet slate and cool spring water. The texture is silky and finely etched rather than opulent, with a long, focused finish that lingers on citrus, spice, and subtle smokiness. While already charming in its youth, this wine is built for the long haul and can easily evolve for 20–30 years or more in a proper cellar, gaining layers of dried fruit, honey, and petrol complexity over time.

Production
Graacher Himmelreich is a steep, south- to southwest-facing hillside on the Mosel, dominated by weathered Devonian slate that stores heat during the day and radiates it back to the vines at night. This distinctive terroir, combined with the cool Mosel climate, allows Riesling to ripen slowly while preserving electric acidity and exceptional aromatic detail. At Joh. Jos. Prüm, harvesting is done exclusively by hand, often with multiple selective passes (often called "Lesegänge") through the vineyard to pick only perfectly ripe and botrytis-affected grapes suitable for Auslese. In the cellar, Prüm follows a traditional, minimalist approach: gentle pressing, slow and cool natural fermentations—typically in stainless steel and large old German oak casks (Fuder)—and long aging on fine lees. The wine is bottled with some natural residual sweetness, without aggressive fining or manipulation, to capture the purity of the fruit and the precision of the site.

Food & Serving
This Auslese is wonderfully versatile at the table. Its sweetness and acidity make it an outstanding match for spicy Asian cuisine—try it with Thai dishes, Sichuan chili sauces, or aromatic Vietnamese cooking—where it cools heat and complements bold flavors. It also pairs beautifully with rich pâté, foie gras, blue cheeses, and creamy washed-rind cheeses, as well as fruit-based desserts that are not overly sweet (apple tart, citrus cakes, or poached stone fruits). For the best experience, serve lightly chilled at around 8–10°C (46–50°F). Decanting is not strictly necessary, but opening the bottle 30–60 minutes before serving or gently swirling in the glass will help the aromatics unfold. As the wine ages, slightly warmer service (10–12°C) can highlight its evolving complexity.
