Tasting Notes
In the glass, the 2024 Paulinsberg Chenin Blanc shows a pale straw to light lemon hue, edged with green reflections that hint at its youth and freshness. The nose is vivid and detailed, with notes of crunchy green apple, pear, quince and white peach layered over lemon zest, chamomile, flint, and a delicate herbal lift. Subtle hints of wet slate and a touch of almond or raw hazelnut underline its cool-climate origins.
On the palate, the wine is taut and linear at first, then fans out with impressive texture and clarity. Expect a bright, driving acidity wrapped around flavors of citrus pith, orchard fruit, and white currant, framed by a pronounced mineral backbone that feels almost saline. The finish is long, dry and mouthwatering, with lingering notes of stone, citrus peel and gentle spice. Production
Paulinsberg is a cool, steep hillside site shaped by poor, stony soils typical of the Mosel, with a high proportion of weathered slate and rocky subsoils that naturally limit yields and accentuate mineral expression. Grapes for this Chenin Blanc are typically harvested by hand to ensure meticulous selection and to protect the fruit on the slope. In the cellar, Günther Steinmetz favors a low-intervention, traditional approach: gentle pressing, spontaneous fermentation with indigenous yeasts, and élevage in stainless steel and/or large neutral oak to preserve purity while adding subtle textural complexity. Minimal handling and modest sulfur use let the vineyard character and grape variety speak clearly in the finished wine.
Food & Serving
This Chenin Blanc is highly versatile at the table, particularly with dishes that mirror its tension and minerality. It pairs beautifully with freshwater fish, ceviche, grilled prawns, and simply prepared white fish with herbs, as well as roasted chicken, pork with apple, light veal dishes, and vegetable-driven plates like asparagus, fennel, or goat cheese salads. It also works well alongside soft goat cheeses and mildly aged cow’s milk cheeses. Serve at 9–11°C (48–52°F) to highlight its aromatic detail and freshness. Decanting is not essential, but giving the wine 15–20 minutes in a carafe or in the glass can help it open up and reveal additional layers of fruit and minerality.
