Château Suduiraut’s vineyards lie in the heart of Sauternes in Bordeaux, on a patchwork of deep gravel mixed with sand and clay over a firm subsoil—an ideal terroir for both botrytised Sauternes and concentrated, characterful dry whites. The gravelly soils ensure excellent drainage and help reflect heat back to the vines, promoting even ripening and contributing to the wine’s purity and finesse. The Vieilles Vignes (old vines) parcels, typically dominated by Sémillon with a careful proportion of Sauvignon Blanc, are carefully tended to keep yields low and flavour intensity high. Harvesting is done by hand, often in multiple passes through the vineyard to ensure that only perfectly ripe, healthy grapes intended for dry wine are selected, distinct from those earmarked for sweet Sauternes. In the cellar, the grapes are gently pressed, and the must is clarified before fermentation. Fermentation and aging generally take place in a combination of French oak barrels (a proportion new) and possibly larger vessels to balance texture with freshness. Regular bâtonnage (lees stirring) may be employed to build mid-palate creaminess and complexity, while careful temperature control preserves the wine’s aromatic precision.
