Bodegas Shaya sources grapes from the Rueda appellation in Castilla y León, where vineyards sit on an elevated plateau with poor, gravelly and sandy soils overlaying limestone, and a pronounced diurnal temperature range that preserves acidity and aromatic intensity. Grapes for this Sauvignon Blanc are typically harvested in the cool of the night or early morning to retain freshness and protect delicate aromatics. After careful sorting, the must is gently pressed and fermented in temperature-controlled stainless-steel tanks to highlight pure fruit character and preserve the variety’s distinctive aromas. The wine is usually aged briefly on fine lees before bottling to add a touch of texture and roundness without overshadowing its bright, youthful profile.
