Sourced from organically farmed vineyards in the sun-drenched IGP Pays d’Oc area of the Languedoc, the 2024 Suzy Chardonnay BIO reflects a Mediterranean climate moderated by cooling breezes that help preserve acidity and aromatic clarity. The soils are typically a mix of limestone, clay, and stony parcels, providing both ripeness and a gentle mineral backbone. Grapes are harvested at optimal ripeness, often in the cooler hours of the day, to protect aromatic expression and natural freshness. In the cellar, fermentation is carried out in temperature-controlled stainless-steel tanks (with a possible small portion in oak, depending on the vintage style) to capture pure fruit character. Aging on fine lees adds texture and subtle complexity without overwhelming the wine’s bright, clean profile, in keeping with Aubert & Mathieu’s focus on precise, modern winemaking and sustainability.
