Production
The Deidesheimer Kalkofen vineyard is one of Von Winning’s top sites, set on limestone-rich marl and sandstone with excellent drainage and exposure, giving Rieslings of both power and striking minerality. Grapes are typically hand-harvested at optimal ripeness, with meticulous selection in the vineyard to ensure only perfectly healthy, concentrated fruit is used for this Grosses Gewächs. In keeping with the estate’s philosophy, the must is often fermented with indigenous yeasts and raised in large oak (often traditional barrels or Stückfass) rather than solely in stainless steel, lending a subtle, Burgundian textural richness while preserving clarity and freshness. The result is a dry, terroir-driven Riesling that reflects both the unique character of Kalkofen and Von Winning’s distinctive, low-intervention approach.
