Crafted by the acclaimed duo behind Venus la Universal, this wine balances freshness, texture, and complexity, making it as food-friendly as it is characterful. Certified organic, it reflects a thoughtful, low-intervention philosophy that lets the Montsant terroir shine. Built on local Mediterranean varieties such as Garnacha Blanca, Macabeu and other traditional white grapes, Dido Blanc stands out for its precision, saline minerality and subtly creamy structure. First released as part of a new-wave movement in Catalan wine, it has quickly become a benchmark for elegant, terroir-driven whites from the Montsant appellation.

Tasting Notes
In the glass, the 2023 Dido Blanc shows a luminous straw to pale gold colour with greenish reflections, hinting at its youth and vibrancy. The nose is expressive yet refined, offering notes of ripe lemon, white peach, and crisp pear layered with Mediterranean herbs, fennel, almond blossom and a gentle saline breeze. Subtle hints of brioche or pastry may appear if part of the blend has seen time in oak or on lees, adding an extra layer of complexity. On the palate, this wine is medium-bodied with a lovely tension between fresh, citrus-driven acidity and a rounded, slightly waxy texture from the local varieties. Flavours of stone fruit, citrus zest and crunchy orchard fruit are woven with notes of anise, chamomile and wet stones, leading to a long, savoury, mineral finish. Enjoyable now for its energy and clarity, the 2023 vintage should develop additional nuance over the next 3–5 years, gaining more honeyed and nutty tones while retaining its core freshness if well cellared.

Production
Venus la Universal farms organically (and with strong biodynamic influence) in the rolling hills of Montsant, where vineyards sit on a mix of clay, decomposed granite and the region’s characteristic llicorella (slate) soils. These poor, well-drained soils, combined with Mediterranean days and cooler nights, help to produce grapes with both ripeness and natural acidity. The fruit for Dido Blanc is typically harvested by hand in small crates to ensure careful selection in the vineyard. In the cellar, the approach is deliberately gentle and minimalist: grapes are pressed with care, and the must is fermented with indigenous yeasts, often in a combination of stainless steel, concrete and neutral barrels to preserve freshness while building texture. A period of aging on fine lees adds depth, creaminess and complexity without overwhelming the wine’s natural purity.

Food & Serving
The 2023 Dido Blanc BIO is a versatile partner at the table, pairing beautifully with Mediterranean-inspired dishes such as grilled sea bass, salt-baked fish, octopus, or prawns with garlic and herbs. It also complements seafood paella, creamy risottos, roast chicken with lemon and thyme, and vegetable dishes featuring fennel, artichokes, or courgette. Soft to semi-hard cheeses like young Manchego, goat cheese or mild sheep’s cheese are also excellent matches. Serve chilled but not too cold, ideally around 10–12 °C, to allow its aromatics and texture to unfold. Decanting is not essential, but a brief 15–20 minutes in a carafe can help the wine open up if served very young.

Venus la Universal is the personal project of winemakers Sara Pérez (of Mas Martinet in Priorat) and René Barbier Jr. (Clos Mogador), two key figures in the modern renaissance of Catalan wine. Founded in the early 2000s near the village of Falset, the estate was created to explore a more intimate, terroir-driven and sensitive expression of Montsant’s vineyards, with a strong commitment to organic and biodynamic farming. Their wines have helped position Montsant as a serious, quality-focused appellation distinct from neighbouring Priorat, known for elegance, authenticity and a clear sense of place. Over the years, Venus la Universal has earned a reputation among critics and wine lovers alike for crafting soulful, finely balanced wines that combine Mediterranean generosity with precision and finesse.
