Tasting Notes
In the glass, the 2023 Dido BIO shows a vibrant, medium‑deep ruby colour with youthful purple highlights at the rim. The nose opens with bright red and black fruits—think ripe cherry, plum and blackberry—wrapped in notes of Mediterranean herbs, wild fennel, dried flowers and a subtle graphite-mineral edge. Gentle hints of cocoa, sweet spice and a touch of liquorice emerge with air, speaking to its time in oak and its warm, sun-kissed origin.
On the palate, Dido is supple and generous yet beautifully balanced, with juicy, mouth‑filling fruit framed by fine, chalky tannins. Flavours of red cherry, blackberry and damson are layered with savoury notes of garrigue, black olive, spice and a light smoky-mineral nuance from the Montsant soils. The natural acidity keeps the wine lively and food‑friendly, while the medium body and polished texture make it immediately approachable. Enjoyable now for its energy and fruit, it also has the structure to develop extra complexity over the next 4–7 years under good cellaring conditions.
Production
Venus la Universal farms its Montsant vineyards organically (BIO), often following biodynamic principles, on a mosaic of clay-limestone and slate (llicorella) soils that give both ripeness and a marked mineral character. The blend typically centres on Garnacha and Cariñena, sometimes complemented by small portions of varieties such as Syrah and other Mediterranean grapes, all harvested by hand at optimal ripeness to preserve freshness and balance. In the cellar, grapes are destemmed and fermented spontaneously with native yeasts in small tanks, with gentle extraction to prioritise finesse over power. The wine is then matured in a mix of used oak barrels and larger wooden vessels, allowing texture and complexity to build without overwhelming the fruit, and bottled with minimal intervention to maintain its sense of place.
Food & Serving
This Montsant red is a highly adaptable food wine, pairing beautifully with grilled lamb chops, herb‑roasted chicken, charcuterie, and flavourful Mediterranean dishes such as roasted vegetables, ratatouille, or tomato-based stews. It also works well with tapas, cured meats, semi‑hard cheeses, and earthy dishes featuring mushrooms or lentils. Serve at 16–18°C (60–64°F) for optimal expression of fruit and aromatics. A brief decant of 30–45 minutes is recommended in its youth to open up the nose and soften the tannins, especially if serving alongside richer, more savoury cuisine.

Venus la Universal is the personal project of renowned winemaker Sara Pérez (of Mas Martinet in Priorat) and her partner René Barbier Jr. (Clos Mogador), two key figures in the modern renaissance of Catalan wine. Founded in the early 2000s in the DO Montsant, the estate is dedicated to expressing the elegance and soul of Mediterranean terroir through organic and biodynamic farming and minimal-intervention winemaking. Their wines, including Dido, have become highly regarded for their balance of finesse, drinkability and a strong sense of place, helping to cement Montsant’s reputation as one of Spain’s most exciting regions for characterful, premium reds.
