Crafted in small quantities from carefully selected plots, it offers a sophisticated yet approachable expression of dry white Bordeaux with real pedigree.

Tasting Notes
In the glass, Caillou Blanc de Talbot 2023 shows a pale straw color with green reflections, signaling its youth and freshness. The nose is immediately expressive, with lifted aromas of lemon zest, grapefruit, and white peach layered over notes of fresh-cut herbs, lime blossom, and a subtle, classy touch of new oak and vanilla. On the palate, it is crisp, finely textured, and medium-bodied, delivering a mouthwatering line of citrus and stone fruits—think Meyer lemon, pomelo, and ripe pear—balanced by a refined mineral edge. Hints of gooseberry, white flowers, and a gentle creaminess from lees contact add complexity without ever weighing the wine down. The finish is long, clean, and saline, making it especially refreshing. Enjoyable in its youth for its energy and perfume, it should develop added nuance—more honeyed and nutty tones—over the next 3–6 years if properly cellared.

Production
Caillou Blanc de Talbot is produced from vineyard parcels within the Château Talbot estate in Saint-Julien, on Bordeaux’s Left Bank. The terroir is classic Médoc: well-drained gravelly soils over a mix of sand and clay, which help the Sauvignon Blanc (and supporting Sémillon) achieve both ripeness and aromatic intensity while preserving acidity. Grapes are typically harvested by hand at optimal maturity in the cool of the morning to protect freshness and aromatic precision. After a gentle pressing, the must is clarified and fermented at controlled temperatures to preserve delicate fruit and floral notes. A portion of the wine is traditionally aged in French oak barrels—with a careful balance of new and used wood—on fine lees, with regular bâtonnage, to build texture and complexity without overpowering the natural brightness of the fruit.

Food & Serving
This 2023 Caillou Blanc de Talbot is a superb match for seafood and refined, lighter dishes. Think oysters, scallops, grilled prawns, seabass or turbot, sushi and sashimi, as well as goat cheese, fresh cheeses, asparagus risotto, and herb-roasted chicken. Its citrusy drive and mineral backbone also make it ideal with Mediterranean cuisine and simple dishes featuring fresh herbs, olive oil, and lemon. Serve well-chilled but not icy, around 9–11°C (48–52°F), to allow the aromatics to fully open. Decanting is not essential, but gently pouring into a carafe 15–20 minutes before serving can help the young wine unfold its floral and citrus complexity.
