Caillou Blanc de Talbot is produced from vineyard parcels within the Château Talbot estate in Saint-Julien, on Bordeaux’s Left Bank. The terroir is classic Médoc: well-drained gravelly soils over a mix of sand and clay, which help the Sauvignon Blanc (and supporting Sémillon) achieve both ripeness and aromatic intensity while preserving acidity. Grapes are typically harvested by hand at optimal maturity in the cool of the morning to protect freshness and aromatic precision. After a gentle pressing, the must is clarified and fermented at controlled temperatures to preserve delicate fruit and floral notes. A portion of the wine is traditionally aged in French oak barrels—with a careful balance of new and used wood—on fine lees, with regular bâtonnage, to build texture and complexity without overpowering the natural brightness of the fruit.

This 2023 Caillou Blanc de Talbot is a superb match for seafood and refined, lighter dishes. Think oysters, scallops, grilled prawns, seabass or turbot, sushi and sashimi, as well as goat cheese, fresh cheeses, asparagus risotto, and herb-roasted chicken.
