Crafted from old-vine Primitivo rooted in the red soils of Manduria, it delivers generous fruit, warmth, and character in a modern, polished style. The Talo line from San Marzano has become a benchmark for contemporary Primitivo di Manduria, marrying local tradition with precise, quality-focused winemaking.

Tasting Notes
In the glass, this Primitivo di Manduria shows a deep, almost opaque ruby-red color with vivid purple highlights, reflecting its youth and concentration. The nose is intensely aromatic, overflowing with ripe blackberries, dark cherries, and plum compote, layered with notes of sweet spices such as vanilla and cinnamon, plus hints of cocoa, licorice, and a touch of Mediterranean herbs. On the palate, it is full-bodied and velvety, with generous, juicy dark fruit framed by soft, well-rounded tannins. Flavors of black cherry, blackberry jam, and ripe figs are balanced by gentle acidity and subtle notes of chocolate, toasted oak, and a whisper of pepper on the finish. The wine is approachable now, especially for those who enjoy rich, fruit-forward reds, but it also has the structure to develop additional complexity over the next 3–5 years, gaining more spice and tertiary notes with short- to mid-term cellaring.

Production
The vineyards for Talo Primitivo di Manduria are located in the heart of Manduria, in Puglia’s Salento peninsula, where hot, dry summers, cooling sea breezes, and iron-rich red clays over limestone create ideal conditions for Primitivo. Many of the vines are older, naturally low-yielding plants that deliver concentrated fruit. Grapes are typically harvested by hand in the cool of early morning to preserve aromatics and freshness, then carefully sorted to ensure only the best clusters are used. After a gentle crush and fermentation at controlled temperatures, the wine undergoes a maceration designed to extract color, flavor, and supple tannins without harshness. It is then aged (often in a mix of stainless steel and oak, typically French and/or American barriques) to add roundness and spice while keeping the generous fruit at the forefront.

Food & Serving
This is a natural partner for hearty, flavorful dishes such as slow-braised beef, rich ragùs over pasta, grilled lamb chops, and barbecued meats with a smoky glaze. It also works beautifully with aged hard cheeses, spicy Italian sausages, and oven-baked dishes featuring tomato, eggplant, and herbs. Serve at around 16–18°C (60–64°F) to highlight both fruit and structure. A short decant of 30–45 minutes helps the wine open up, smoothing the tannins and allowing the deeper spice and chocolate notes to emerge.
