Sourced primarily from Salentein’s high-altitude vineyards in the acclaimed Uco Valley of Mendoza, this Cabernet benefits from intense sunlight, cool nights, and alluvial soils rich in stones and sand—conditions that produce grapes with thick skins, vivid aromatics, and natural acidity. The fruit is harvested by hand at optimal ripeness, with careful sorting to ensure only the best clusters are used. Fermentation takes place in temperature-controlled tanks to preserve varietal character and aromatic purity, with gentle extraction to achieve ripe, polished tannins. After fermentation, a selection of the wine is aged in oak barrels—predominantly French, with some American oak—to add complexity, structure, and spice without overshadowing the vibrant fruit profile that defines this cuvée.
