Harvesting is done by hand, typically in small crates, allowing for strict bunch selection in the vineyard and further sorting at the cellar. Fermentation is carried out using indigenous yeasts, often in concrete or large open wooden vats, with a sensitivity to extraction to preserve finesse and purity of fruit. A portion of whole clusters is usually retained to enhance aromatic lift and structure. Aging takes place in carefully chosen seasoned oak barrels and large casks, emphasizing integration and textural refinement rather than overt oak flavor, before the final blend is assembled and bottled with minimal intervention to express the character of Swartland as clearly as possible.
