For an Auslese trocken, the fruit is typically harvested by hand in several passes, with careful selection of the ripest, healthiest bunches to achieve optimal ripeness and purity. In the cellar, gentle pressing and a cool, controlled fermentation—most likely in stainless steel, sometimes complemented by a small share of neutral wooden casks—help preserve freshness and varietal character. Extended aging on fine lees adds texture, complexity and a refined mouthfeel without overwhelming the wine’s clarity and mineral focus.
