Grapes are hand-harvested at modest sugar levels to preserve natural acidity and picked in small lots at optimal ripeness. In the cellar, RAEN leans on a low-intervention philosophy: whole-cluster fermentation is often employed, native yeasts are used for spontaneous fermentation, and extraction is kept gentle through delicate pump-overs and minimal punch-downs. Aging takes place in mostly neutral French oak barrels, allowing the purity of site and variety to shine without heavy oak imprint, and the wine is bottled with minimal handling to retain nuance and vibrancy.
