Tasting Notes
In the glass, the 2023 Seven Flags Chardonnay shows a bright, pale straw color with glints of green, hinting at its youth and vibrancy. The nose is layered and precise: ripe lemon and lime zest, fresh green apple and white peach are interwoven with notes of toasted hazelnut, brioche, flint, and subtle vanilla from well-judged oak. Hints of jasmine, chamomile and a chalky minerality add complexity and finesse.
On the palate, it is taut yet generous, with a fine, linear acidity that drives the wine and keeps it wonderfully refreshing. Paul Cluver’s Seven Flags Chardonnay is crafted from carefully selected parcels within the estate’s high-altitude vineyards in Elgin, one of South Africa’s coolest winegrowing regions. The terroir is defined by decomposed shale and clay-rich soils, cool maritime influences and marked diurnal temperature shifts, all of which help preserve acidity and nuance in the fruit. Grapes are typically hand-harvested in small batches to ensure optimal ripeness and meticulous sorting. In the cellar, whole-bunch or gently pressed juice is fermented in French oak barrels (a proportion new, with the remainder second- and third-fill) using a mix of wild and selected yeasts. Extended lees contact with regular bâtonnage builds texture and complexity, while careful oak integration ensures the wood frames rather than dominates the wine. The result is a Chardonnay that marries precision and minerality with depth and richness.

This refined Chardonnay is a superb partner for elegantly prepared seafood and poultry dishes. Think seared scallops with beurre blanc, grilled line fish, lobster with drawn butter, roast chicken with tarragon, or creamy mushroom risotto.
