Tasting Notes
In the glass, the 2023 Saint-Aubin Premier Cru La Chatenière shows a pale lemon to light gold hue, with a brilliant, glinting rim that hints at its youthful vibrancy. The nose is fine and detailed rather than showy: white flowers, lemon zest, crunchy green apple and pear mingle with wet stone, chalk, and a delicate touch of hazelnut and fresh butter. Subtle notes of white peach and citrus blossom emerge with a bit of air, underscoring the wine’s precision and lift. On the palate, this is taut and racy yet texturally refined, with a core of citrus and orchard fruit framed by vibrant acidity and a saline, mineral edge. Flavors of Meyer lemon, green apple, and lime peel are layered with hints of almond, light brioche, and a whisper of smoke from well-judged barrel élevage. The finish is long, mouthwatering, and focused on chalky minerality and citrus pith rather than overt oak. While already approachable in youth for its vivid fruit and tension, this 2023 has the structure to develop gracefully over 6–10 years, gaining complexity, roundness, and more pronounced nutty, honeyed nuances with time in bottle.

Production
La Chatenière is a steep, south to southeast-facing premier cru in Saint-Aubin, planted on poor, stony soils rich in limestone and marl—classic white Burgundy terroir that naturally produces low yields and great concentration. The altitude and exposure bring excellent ripeness while preserving freshness, giving wines that are both aromatic and firmly mineral. Joseph Colin practices careful, largely manual viticulture, with meticulous canopy management and selective hand-harvesting to bring in only perfectly ripe, healthy Chardonnay grapes. In the cellar, the fruit is gently pressed and fermented with indigenous yeasts in French oak barrels, a modest proportion of which are new, to add texture without overwhelming the terroir. The wine then matures on its fine lees, with minimal intervention, allowing the natural clarity and tension of La Chatenière to shine through.

Food & Serving
This Saint-Aubin Premier Cru is a superb partner for refined dishes that echo its delicacy and minerality. Think shellfish (oysters, scallops, langoustines), grilled or poached white fish, lobster with a light butter or citrus sauce, roast chicken with herbs, veal in cream-based sauces, or simply prepared vegetables such as asparagus, artichokes, and fennel. It also pairs beautifully with soft-ripened cheeses like Brie, Chaource, or young goat’s cheese. Serve well-chilled but not icy, ideally around 10–12°C (50–54°F), to allow its aromas to fully open. Young bottles benefit from a brief 20–30 minutes in a carafe or from being opened ahead of serving, while more mature examples can be gently decanted to separate any sediment and let the wine unfold its subtler tertiary notes.
