The 2023 Joseph Colin Chassagne-Montrachet Premier Cru Les Caillerets is a precise, mineral-driven white Burgundy from one of the village’s most revered Premier Cru sites. Crafted in small quantities, it showcases the tension, purity, and elegance that have quickly made Joseph Colin one of the most talked-about winemakers in the Côte de Beaune. This cuvée marries the classic power of Chassagne with the refinement and stony finesse that define Les Caillerets.
Tasting Notes
In the glass, this wine presents a pale to medium straw-yellow hue with glints of green, signaling freshness and youth. The nose is detailed and lifted: expect aromas of lemon zest, white flowers, crushed stones, and green pear, layered with nuances of hazelnut, fresh cream, and a whisper of toasted oak. Subtle hints of chalk dust, flint, and wet limestone underline the vineyard’s name—“Caillerets,” a nod to its stony soils.
On the palate, the wine is taut, finely etched, and intensely focused. A spine of bright acidity frames flavors of citrus (Meyer lemon, grapefruit pith), orchard fruits (pear, apple), and white peach, with delicate notes of brioche, almond, and fine spice from judicious barrel aging. The texture is both silky and saline, building in depth through the mid-palate and finishing long, chalky, and mouthwatering. Still very youthful in 2023, it will reward patience: peak drinking is likely to begin in 4–5 years and extend comfortably over 10–15 years, gaining more creaminess, nuttiness, and complexity with bottle age while retaining its mineral core.
Production
Les Caillerets is one of Chassagne-Montrachet’s most prized Premier Cru climats, known for its high proportion of limestone and stony, well-drained soils on a mid-slope, southeast-facing exposition—ideal for Chardonnay of finesse and tension. Yields are kept deliberately low to enhance concentration, and harvesting is done by hand to ensure that only perfectly healthy, optimally ripe bunches reach the cellar. After gentle pressing, the must is allowed to settle before fermenting in French oak barrels, a portion of which are new, with the remainder in seasoned oak to preserve purity of fruit. Fermentation and élevage on fine lees, often with limited bâtonnage, build texture and complexity without sacrificing the wine’s inherent precision. The wine is then assembled and lightly filtered, if at all, before bottling to retain maximum character from this exceptional terroir.
Food & Serving
This Chassagne-Montrachet Premier Cru Les Caillerets shines alongside refined dishes where texture and subtlety matter: think buttery poached lobster, seared scallops, sole meunière, turbot with beurre blanc, or roasted chicken with morel mushrooms and cream. It also pairs beautifully with richer vegetable dishes such as parmesan risotto, truffled tagliatelle, or roasted cauliflower with hazelnuts. Serve at 10–12°C (50–54°F) to allow the aromatics to fully express, cooler for apéritif and slightly warmer at the table. In its youth, decanting for 30–45 minutes helps the wine open and show its full range; with bottle age, a gentle splash in a carafe just before serving is sufficient.

Joseph Colin comes from one of Burgundy’s most distinguished winemaking families, the Colin-Deléger and Marc Colin clan, deeply rooted in Chassagne-Montrachet. Working with prime parcels across Chassagne and neighboring appellations, Joseph emphasizes careful vineyard work, low yields, and a restrained, finely tuned approach in the cellar.
