Crafted from steep, slate-rich slopes above the town of Bernkastel, this Kabinett balances delicate sweetness with electric acidity in a way few producers can match. As one of the classic single-vineyard bottlings from JJ Prüm, it offers both immediate charm and the promise of graceful evolution in the cellar.

Tasting Notes
In the glass, this Riesling typically shows a pale, shimmering lemon color with greenish highlights that hint at its youth and vitality. The nose is pure and finely etched, with notes of white peach, green apple, lime zest, and crunchy pear, layered over hints of white flowers, wet slate, and a touch of herbal lift. With some air, more complexity unfolds—think citrus blossom, subtle honeycomb, and a cool, stony minerality. On the palate, the 2023 Bernkasteler Badstube Kabinett is light-bodied yet intensely flavored, with a delicate off-dry sweetness that is immediately counterbalanced by mouthwatering acidity. Flavors of citrus (lime, lemon sorbet), stone fruits (ripe peach, apricot), and crisp apple glide across the tongue, underpinned by a precise mineral core and a finely textured, almost weightless feel. The finish is long, vibrant, and refreshingly saline, leaving a clean, crystalline impression rather than any sense of heaviness. While already inviting in its youth, this Kabinett has excellent aging potential—10–20 years or more in a good cellar—gaining layers of complexity, gentle petrol notes, and a more honeyed, textural depth over time.

Production
Sourced from the historic Bernkasteler Badstube vineyard in the Mosel, this wine reflects a classic cool-climate, slate-dominated terroir. The steep, south to southwest-facing slopes, composed largely of weathered Devonian slate, ensure optimal sun exposure and superb drainage, concentrating flavor while preserving Riesling’s hallmark acidity. JJ Prüm harvests by hand, often late, in multiple passes (selective picking) to ensure perfect physiological ripeness while maintaining moderate potential alcohol suitable for Kabinett. In the cellar, the grapes are gently pressed and the must is allowed to ferment slowly, typically with indigenous yeasts, in stainless steel and large, old German oak fuders. Fermentation is carefully monitored and often stopped to retain a precise level of residual sugar, resulting in a naturally low-alcohol, delicately sweet style. The wine then rests on its fine lees to enhance texture and complexity, with no malolactic fermentation, thereby preserving the bright, incisive acidity and purity of fruit.

Food & Serving
This Kabinett’s interplay of gentle sweetness and zesty acidity makes it remarkably versatile at the table. It shines with spicy Asian cuisines—think Thai salads, sushi with a touch of wasabi, Vietnamese dishes, or lightly spiced curries—as well as with aromatic dishes such as chili-lime prawns or ginger-scented chicken. It pairs beautifully with fresh seafood (poached white fish, scallops, ceviche), soft cheeses like young goat cheese or mild washed-rind cheeses, and can be a delightful partner to lightly fruity desserts such as apple tart or citrus panna cotta. Serve well chilled at about 8–10°C (46–50°F) to emphasize its freshness and precision. Decanting is not necessary, but opening the bottle 15–20 minutes before serving and allowing it to warm slightly in the glass will help the aromatics unfurl and show more depth.
