Tasting Notes
In the glass, the wine shows an intense, deep ruby core with vibrant purple highlights that hint at its youth and concentration. The nose opens with a vivid burst of ripe blackberry and plum, followed by lifted aromas of black cherry, violets and garrigue-like herbs. With air, more complex layers emerge: freshly cracked black pepper, hints of smoked meat, leather, graphite and finely integrated oak spice. On the palate, this is full-bodied yet beautifully poised, with a taut, linear structure that reflects its alpine origins. Juicy dark fruits – blackcurrant, black cherry and stewed red berries – are wrapped in notes of black pepper, fresh leather, and subtle cocoa, underpinned by a stony, saline edge from the slate and moraine soils. The tannins are crisp, fine-grained and elegant, providing grip without heaviness, while the bright acidity keeps the wine lively and refreshing through a long, precise finish. Built to evolve, CAYAS Syrah typically has an aging potential of 8 to 15 years from vintage, gaining complexity, savoury nuance and silky texture with time in bottle.

Production
The grapes for CAYAS Syrah are sourced from select parcels around Conthey, Saillon and Fully in Valais, where steep, sun-drenched slopes and cool alpine nights create ideal conditions for slow, even ripening. The soils are a mix of slate and glacial moraine, lending both structure and a distinct mineral backbone to the wine. The fruit is harvested by hand to ensure optimal selection in the vineyard, then carefully sorted before vinification. After fermentation, the wine is matured for around 24 months in 228-litre oak barrels, a regimen that adds depth, polish and aromatic complexity without overshadowing the purity of the Syrah fruit or the character of its high-altitude terroir.

It also pairs beautifully with characterful cheeses – such as aged hard cheeses or semi-soft, washed-rind styles – and even dark chocolate with a high cocoa content, where the wine’s dark fruit, spice and freshness provide a compelling counterpoint. Serve at 16–18°C; decanting for 1–2 hours in its youth will help the aromas unfurl and soften the tannins, while mature bottles may need only a gentle splash-decant to remove sediment and allow the wine to open.
