This cuvée is all about tension, finesse and terroir, offering a sophisticated alternative to more fruit-forward styles of Sauvignon Blanc. Drawn from flint-rich parcels that naturally limit yields, Grand Roc delivers a striking combination of citrus brightness and smoky, stony depth. Tasting Notes
In the glass, the 2023 Grand Roc shines a pale lemon color with green reflections, signalling freshness and youth. Swirl the wine and you’ll notice a brilliant, almost crystalline appearance that hints at its tension and precision. The nose opens with zesty notes of lime, pink grapefruit and yuzu, followed by green apple, white peach and fresh gooseberry. As it evolves in the glass, more complex layers emerge: crushed flint, wet river stones, subtle smoke, and a whisper of wild herbs and white flowers. There’s a distinct, almost gunflint character typical of silex terroir that sets it apart from softer, more grassy Sancerres. On the palate, this is a taut, linear and intensely mineral Sauvignon Blanc. Bright citrus and orchard fruits lead—think lemon zest, grapefruit pith and crisp pear—wrapped in a firm backbone of acidity that gives the wine great drive and length. The mid-palate is sleek and saline, with a mouthwatering, chalky texture and a lingering echo of flint, sea spray and grapefruit peel on the finish. The oak signature, if any, is very discreet, allowing the terroir to remain front and center. Enjoyable now for its vibrant energy and purity, this cuvée has the structure to evolve gracefully over 4–7 years from the vintage. With time in bottle, the wine should gain notes of beeswax, smoke, and gentle nuttiness, while retaining its distinctive mineral spine.

Production
Gérard Fiou’s Grand Roc is sourced from steep, flint-rich (silex) hillsides around Sancerre in the eastern Loire, where poor, stony soils and excellent drainage naturally stress the vines and concentrate flavor. The silex subsoils retain heat and slowly release it at night, promoting even ripening and imbuing the wine with its hallmark smoky, flinty character. Certified organic (BIO), the vineyards are farmed without synthetic herbicides or pesticides, with an emphasis on soil health, biodiversity and careful canopy management. Harvest is typically done by hand to allow strict selection of perfectly healthy, optimally ripe Sauvignon Blanc grapes. In the cellar, the philosophy is to preserve purity and terroir expression: gentle pressing, cool fermentation in stainless steel or inert tanks, and long aging on fine lees to add texture and complexity without masking the mineral core. Malolactic fermentation is usually blocked or only partially allowed to maintain the wine’s vivid acidity and precision. The result is an elegant, terroir-focused Sancerre that speaks clearly of silex rather than winemaking artifice.

Food & Serving
This Sancerre’s racy acidity and pronounced minerality make it a natural partner for seafood. It pairs beautifully with oysters, shellfish (especially scallops, langoustines and crab), sushi and sashimi, or simply grilled white fish with lemon and fresh herbs. It also excels alongside goat’s cheese—particularly Crottin de Chavignol—lightly dressed salads with citrus or fennel, asparagus dishes, ceviche, and delicate vegetable preparations such as pea risotto or grilled green vegetables. For something heartier, try it with roast chicken with lemon and tarragon or a goat cheese and herb tart. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatics and texture to fully express. The wine does not require extended decanting, but pouring it into a carafe or simply opening it 15–20 minutes before serving can help it open up aromatically, especially in its youth. Use a medium-sized white wine glass to balance freshness with aromatic complexity.
