The 2023 Eve & Michel Rey Pouilly-Fuissé Les Crays is a refined white Burgundy that captures the limestone-rich soul of one of the appellation’s most prized climats. Crafted from Chardonnay grown on steep, stony slopes, this cuvée delivers precision, minerality, and depth in equal measure. Tasting Notes
In the glass, the wine shows a pale to medium straw-yellow hue with delicate green highlights, signaling both youth and freshness. The nose is immediately inviting, offering layers of ripe citrus, white peach, and just-ripe pear, intertwined with notes of crushed stone, chalk, white flowers, and a subtle hint of toasted almond and fresh butter from careful barrel élevage.
On the palate, this Pouilly-Fuissé is vibrant and finely etched, with a spine of limestone-driven minerality that frames the fruit. Flavors of lemon zest, nectarine, and green apple are lifted by a saline edge and gentle spice, leading into a long, precise finish with notes of hazelnut and wet stone. Production
Les Crays is a prestigious, high-slope terroir in Pouilly-Fuissé, characterized by thin soils over hard limestone and excellent drainage—conditions that naturally limit yields and intensify flavor. Eve & Michel Rey farm their plots by hand with great care, favoring sustainable, low-intervention practices to preserve biodiversity and express the character of the vineyard. Grapes are harvested by hand at optimal ripeness, sorted meticulously, and gently pressed to protect the purity of the fruit. Fermentation takes place with indigenous yeasts, primarily in Burgundian oak barrels, with a balanced proportion of older wood to avoid excessive oak imprint. The wine is then aged on fine lees, lending texture and complexity, before bottling with minimal intervention to respect the clarity and mineral-driven style of Les Crays.
Food & Serving
This 2023 Pouilly-Fuissé Les Crays is an excellent partner for refined seafood dishes such as seared scallops, grilled turbot, or butter-poached lobster, as well as poultry in cream or morel mushroom sauces. It also pairs beautifully with goat’s cheese, Comté, and other firm Alpine-style cheeses. Serve at around 10–12°C (50–54°F) to allow both its freshness and subtle complexity to show. A brief decant of 20–30 minutes in its youth can help the wine open up aromatically, especially if served with richer dishes.
