This cuvée is a compelling choice for those seeking artisanal Pouilly-Fuissé with a clear sense of place.

Tasting Notes
In the glass, this Pouilly-Fuissé shows a pale gold color with bright, greenish reflections that hint at its freshness and youth. The nose opens with aromas of lemon zest, ripe pear and white peach, layered with notes of acacia blossom, crushed stones and a subtle touch of toasted hazelnut. On the palate, the wine is precise and textural, combining a generous, rounded mid-palate with a fine-cut acidity. Flavors of citrus, orchard fruits and a hint of juicy apricot are underpinned by a distinct chalky minerality and a lightly creamy, almost saline finish. The structure and balance suggest it will drink beautifully in its youth but also has the potential to evolve over the next 4–6 years, gaining complexity and more pronounced nutty, honeyed nuances with a bit of bottle age.

Production
La Maréchaude comes from vineyards in Pouilly-Fuissé, in the southern part of Burgundy’s Mâconnais, where Chardonnay thrives on limestone-rich clay and marl soils over a rocky subsoil. This terroir naturally lends tension, minerality and a fine aromatic precision to the wines. Grapes are typically harvested by hand to allow for careful sorting of bunches in the vineyard and at the winery. Vinification focuses on preserving purity and terroir expression: gentle pressing of whole clusters, followed by a cool, controlled fermentation. Aging is usually carried out in a mix of stainless steel and neutral to lightly used oak barrels, giving texture and complexity without overpowering the wine’s fresh, mineral-driven profile.

Food & Serving
This Pouilly-Fuissé is an excellent partner for seafood and refined, delicately flavored dishes. Think seared scallops, grilled prawns, oysters, poached or butter-roasted white fish, as well as roast chicken, veal in light cream sauces, or fresh goat’s cheese and mild, semi-hard cheeses. Serve at 10–12°C (50–54°F) to highlight its precision and aromatic detail. A brief decant of 15–20 minutes, or simply opening the bottle a little before serving, can help the wine unfurl its full range of fruit and mineral notes.
