The Chardonnay grapes for this wine come from Enate’s vineyards in Somontano, a denomination at the foothills of the Pyrenees in northeastern Spain. Here, the combination of altitude, significant day‑night temperature swings, and well‑drained, limestone‑rich soils helps preserve aromatic intensity and natural acidity while achieving excellent ripeness. Grapes are typically harvested by hand to ensure careful selection and transported quickly to the cellar to protect freshness. After a gentle pressing, the must is fermented directly in oak barrels—most often French—allowing the wine to gain texture, complexity, and subtle toast notes from the very beginning of its life. Aging on fine lees with periodic stirring (bâtonnage) enhances mouthfeel and adds depth, before careful clarification and bottling to retain both richness and precision.
