The domaine has been farmed organically and biodynamically for many years, with meticulous attention to soil health and biodiversity; vineyard work is largely done by hand, including careful green harvesting and selective picking at optimal ripeness. After a gentle pressing of whole clusters, the must is allowed a slow, temperature-controlled fermentation—typically with indigenous yeasts—in large, traditional old oak foudres, preserving varietal character and terroir expression. The wine rests on fine lees until bottling, enhancing texture and aromatic complexity while avoiding overt oak influence.
