Tasting Notes
In the glass, Jardin du Calvaire typically shows a pale lemon to light straw color with green reflections, underlining its freshness and youth. The nose opens with bright citrus – think lemon zest and grapefruit – layered with white flowers, crunchy green apple, and a subtle chalky minerality. Hints of pear, fresh almond, and a whisper of vanilla or brioche may appear with air, depending on the élevage. On the palate, the 2023 vintage is likely to be vivid and precise, with a lively backbone of acidity that keeps everything focused and refreshing. Expect flavors of lemon curd, green apple, and stone fruits like white peach, wrapped in a fine, subtly creamy texture from careful work with lees. Production
Jardin du Calvaire comes from the Hautes-Côtes de Beaune, a cooler, elevated zone lying on the limestone-rich slopes and plateaus above the main Côte d’Or. The soils here are typically thin, stony clays over fractured limestone, bringing both drive and minerality to the Chardonnay, while the altitude preserves acidity and aromatic lift. Grapes are harvested by hand to ensure careful selection in the vineyard, then gently pressed to obtain pure, clean juice. Fermentation takes place in temperature-controlled conditions, often in a mix of stainless steel and older Burgundian barrels, allowing the wine to develop texture and nuance without heavy oak imprint. Aging on fine lees adds depth and a touch of creaminess, while maintaining the hallmark precision and tension that define Sauzet’s whites.

Food & Serving
This Bourgogne Hautes-Côtes de Beaune is extremely versatile at the table, pairing beautifully with simply prepared seafood such as grilled sea bass, scallops, or oysters, as well as roast chicken, turkey, or veal in light cream or lemon-butter sauces. It also works wonderfully with goat cheese, young Comté, vegetable risottos, and delicately flavored Asian dishes featuring shellfish or white fish. Serve well-chilled but not icy, ideally around 10–12°C (50–54°F), to allow the aromatics and texture to open up. Decanting is not essential, but a short 15–20 minutes in a carafe before serving can help the wine express more floral and stone-fruit notes, especially in its first couple of years.

Personally, I am very fond of Etienne Sauzet. Wine that competes with the other big names, but costs half as much, because it is not just the name you have to pay for
