Tasting Notes
In the glass, this Pinot Noir shows a clear, luminous ruby hue with soft garnet reflections at the rim, signalling both youth and finesse. The nose is immediately charming and expressive, with aromas of ripe black cherry, crushed blackberries and wild strawberries, supported by hints of violet, subtle spice and a touch of forest floor that adds complexity without heaviness.
On the palate, the wine is fresh, supple and medium-bodied, with juicy black fruit at the core – think black cherry, blackcurrant and a little plum – wrapped in fine, silky tannins. The maceration of about one week before pressing preserves the grape’s bright fruit and crisp structure, resulting in a Pinot that feels lively rather than extracted. The finish is dry and clean (only 0.2 g/L residual sugar), with a gentle tannic grip and a whisper of spice that invites another sip. While this 2023 vintage is crafted for enjoyment in its youth over the next 3–5 years, its balance of acidity and tannin gives it just enough structure to evolve pleasantly in bottle in the short term.
Production
Sourced from AOC Alsace vineyards around Saint-Hippolyte, this Pinot Noir grows on classic argilo-calcaire (clay-limestone) soils that naturally limit vigor and enhance finesse and aromatic purity. The domaine is in organic conversion and works with deep respect for the environment, alternating ploughed and grassed rows to manage vine vigor and preserve biodiversity. Grapes are harvested by hand to allow careful selection, then undergo a relatively short maceration of around one week before pressing, a key to the wine’s fresh, fruit-forward Alsace style. In the cellar, tradition and modernity are carefully balanced: gentle pneumatic pressing, fermentation with only natural yeasts in temperature-controlled stainless steel tanks, and a focus on precision and cleanliness, all while minimizing intervention and ecological footprint. The result is a pure, unadorned expression of Pinot Noir and its terroir.
Food & Serving
This 2023 Pinot Noir is a versatile partner at the table, pairing beautifully with charcuterie, roast chicken, duck breast, pork tenderloin, grilled salmon or tuna, and lighter veal dishes. It also works well with mushroom-based dishes, mild cheeses, and savory tarts. Serve slightly chilled at 12–16°C (54–60°F) to highlight its freshness and delicate aromatics; too warm and it may lose some of its lift. A brief decant of 15–30 minutes can help the wine open up its black-fruit and floral notes, especially in its first couple of years, but it’s equally enjoyable poured straight from the bottle for a relaxed, everyday fine-wine experience.

Domaine Allimant-Laugner is the product of two winegrowing families whose roots in Alsace go back to the 17th century: the Laugner family in Dieffenthal and the Allimant family in Saint-Hippolyte. In 1816, after serving in all of Napoleon’s campaigns, Captain François-Antoine Allimant purchased vineyards on the slopes below the Château du Haut-Koenigsbourg and a historic 1664 farmhouse in Orschwiller, which remains the heart of the estate today. Like many Alsatian families, they once farmed mixed crops, but the focus shifted decisively to wine with Charles Allimant, who began bottling under his own name in 1949 and expanded distribution together with his daughter Mariette and her husband René Laugner. Their son Hubert, with his wife Françoise, brought the domaine to wider renown from 1984 onward, and since 2013 their son Nicolas has carried the torch, representing more than ten generations of family stewardship. Today, Domaine Allimant-Laugner is recognized as a reference estate in its corner of Alsace, known for combining sustainable, environmentally respectful vineyard work with modern, precise cellar practices to produce characterful, terroir-driven wines.
