Tasting Notes
In the glass, the 2023 Château Margaux Pavillon Blanc presents a pale straw color with glints of green, signaling its youth and freshness. The nose is intensely expressive yet refined, opening with lifted aromas of citrus blossom, lime zest, and white grapefruit, intertwined with notes of ripe pear, white peach, and a delicate tropical hint of passion fruit. Subtle layers of fresh-cut herbs, crushed stone, and a gentle, well-integrated touch of oak add complexity and dimension. On the palate, the wine is precise, lively, and beautifully balanced. A core of ripe citrus and stone fruit is carried by a vibrant, mouthwatering acidity, giving the wine both tension and length. Texturally, it is silky and fine-boned, with a lightly creamy mid-palate that never feels heavy, finishing on a long, saline, mineral-driven note that is quintessentially Margaux. While already seductive in its youthful brightness, the 2023 Pavillon Blanc has the structure and concentration to evolve gracefully for 8–12 years, developing more layered aromas of honey, lanolin, and toasted almond with time in bottle.

Production
Pavillon Blanc is produced from 100% Sauvignon Blanc vines planted in the cooler, well-drained parcels of the Château Margaux estate, located on the left bank of the Gironde in the Margaux appellation. The terroir here is dominated by deep gravel over limestone and clay, which ensures excellent drainage and promotes low yields and high concentration, particularly favorable for aromatic white wines. Harvesting is carried out by hand, parcel by parcel, with meticulous selection in the vineyard and on sorting tables to retain only the most pristine, perfectly ripe berries. Fermentation typically takes place in temperature-controlled conditions, often in a mix of stainless steel and fine French oak, allowing the wine to preserve its razor-sharp freshness while gaining subtle texture and complexity from élevage on fine lees. The result is a white Bordeaux of remarkable precision, purity, and age-worthiness, produced in very limited quantities.

Food & Serving
The 2023 Château Margaux Pavillon Blanc is a superb partner for refined seafood and delicate, high-quality ingredients. It pairs beautifully with oysters, scallop carpaccio, lobster with citrus butter, and simply grilled turbot or sole, as well as sashimi, ceviche, and elegant vegetable dishes such as asparagus with hollandaise or pea risotto with fresh herbs. Soft, young goat’s cheese and lightly aged cow’s milk cheeses also complement its vibrant acidity and mineral profile. Serve chilled, ideally between 9–11°C (48–52°F), to highlight its aromatic lift and tension. While decanting is not strictly necessary for such a young white, a brief 15–20 minutes in a carafe before serving can help the wine open up and reveal additional layers of fruit and florality.
