In the glass, the 2023 Pavillon Blanc shines a pale, luminous straw with green reflections, hinting at its vibrancy and youth. The nose is immediately expressive yet refined: lifted notes of lemon zest, white grapefruit and lime leaf, layered with white flowers, fresh-cut herbs, and a subtle saline breeze. With a bit of air, more complexity unfurls—hints of gooseberry, white peach, chalk and a delicate touch of smoke.
On the palate, this vintage is both racy and beautifully composed. Intense citrus and stone-fruit flavors are carried by a spine of precise, mouthwatering acidity, giving the wine an electric energy while remaining silky and polished in texture. The oak, if present, is impeccably integrated, contributing structure and breadth without overshadowing the purity of fruit and terroir. The finish is long, mineral and saline, with lingering notes of citrus peel and crushed stones. Production
Sourced from a dedicated parcel of older Sauvignon Blanc vines within the Château Margaux estate, Pavillon Blanc is a true terroir wine, shaped by deep gravel soils over limestone that promote excellent drainage and natural concentration. The 2023 harvest would have been conducted strictly by hand, with multiple passes through the vineyard to ensure only perfectly ripe, healthy bunches are selected. In keeping with the estate’s philosophy, yields are kept very low, and the final blend is composed from only a small percentage of the total production, after severe selection. Fermentation takes place in temperature-controlled conditions, often in a high proportion of new or recent French oak barrels, followed by aging on fine lees with gentle bâtonnage to enhance texture and aromatic complexity. The result is a white Bordeaux of precision, purity and remarkable finesse.
Food & Serving
Pavillon Blanc 2023 is an outstanding partner for refined seafood and delicately prepared dishes. Think oysters and shellfish, ceviche, scallops with citrus or fennel, grilled turbot, lobster, or poached white fish with beurre blanc. It also shines alongside fresh goat’s cheese, sashimi, sushi, and light vegetable dishes featuring asparagus, peas or citrus accents. Serve well-chilled, ideally around 9–11°C (48–52°F), to highlight its brightness and aromatics; as it warms slightly in the glass, more layers will emerge. Decanting is not essential for such a young, vibrant white, but opening the bottle 15–20 minutes before serving or gently swirling in the glass will allow the bouquet to open fully.
