The 2023 Château Changyu Moser XV Cabernet Sauvignon Blanc de Noir Barrique is a strikingly original white wine crafted from red Cabernet Sauvignon grapes in the heart of China. Tasting Notes
In the glass, this Blanc de Noir typically shows a pale straw to light golden hue, sometimes with the faintest blush from its red grape origins and subtle barrel influence. The nose is refined and expressive, opening with notes of citrus blossom, white peach, and pear, layered with hints of fresh brioche, vanilla pod, and a delicate spiciness from the barrique.
On the palate, expect a medium to full-bodied white with a firm, Cabernet-derived backbone. Flavors of ripe stone fruit, lemon curd, and crisp apple are intertwined with nuances of hazelnut, light toast, and cream. The acidity is vibrant, keeping the wine focused and refreshing, while the barrel aging adds texture and length. Young, it shows its energy and precision; over the next 3–5 years, it should develop more complexity, rounding out its edges and further integrating the oak.
Production
Château Changyu Moser XV sources grapes predominantly from Ningxia’s high-altitude, continental-climate vineyards, where warm, sunny days and cool nights help Cabernet Sauvignon achieve ripeness while retaining acidity. The dry conditions and gravelly, often sandy soils contribute to concentration and purity of fruit. Grapes for this Blanc de Noir are usually harvested by hand at optimal ripeness to preserve aromatic delicacy and avoid any unwanted phenolic bitterness. In the cellar, the fruit is gently pressed, with minimal skin contact to keep the juice pale, then fermented as a white wine under controlled temperatures to retain freshness. A portion (or all) of the wine is then aged in barrique, adding structure, creaminess, and subtle spice, while regular lees contact may be used to enhance texture and complexity.
Food & Serving
This is a versatile food wine that pairs beautifully with richer seafood dishes such as butter-poached lobster, seared scallops, or grilled prawns, as well as roast chicken, pork tenderloin, and veal in creamy or lightly spiced sauces. It also complements Asian-inspired cuisine—think miso-glazed cod, lightly spiced dim sum, or Hainanese chicken rice—where its structure and freshness can cut through savoury flavours. Serve chilled but not too cold, ideally around 10–12°C, to allow the oak and fruit to fully express themselves. A brief decant of 15–30 minutes can help the wine open up, especially in its youth, revealing more nuance on the nose and a silkier texture on the palate.
