Production
Château Canon-la-Gaffelière lies on the southern slopes of Saint-Émilion, where warm, well-exposed parcels of clay-limestone and clay-sand soils are particularly well-suited to Cabernet Franc and Merlot. The vineyards are farmed with great attention to detail, with selective, mostly manual harvesting parcel by parcel to ensure optimal ripeness and pristine fruit. In the cellar, the grapes are sorted carefully before a precise vinification in temperature-controlled vessels, allowing each plot to be fermented separately. A thoughtful élevage in French oak barrels (a proportion new) brings polish and aromatic complexity without overpowering the wine’s natural freshness and mineral character.
Food & Serving
This Saint-Émilion Premier Grand Cru Classé is an excellent partner for refined dishes such as roast lamb with herbs, veal tenderloin, duck breast, or slow-braised beef short ribs. It also pairs beautifully with mushroom-based dishes, truffle risotto, and aged hard cheeses like Comté or Pecorino. Serve at 16–18°C (60–64°F) to showcase its aromatic detail and balance. In its youth, decant for 1–2 hours to soften the tannins and allow the bouquet to unfurl fully; as it matures, a gentle 30–45 minute decant will typically suffice.
