In recent decades, Le Carillon has evolved from a simple second label into a serious, terroir-driven wine in its own right, reflecting the ongoing rise in quality at Angélus.

Tasting Notes
In the glass, the 2023 Le Carillon de l’Angélus shows a deep, vibrant ruby color with youthful purple hues at the rim, signaling its freshness and concentration. The nose is precise and fragrant, offering layers of ripe red and black fruits—think black cherry, wild raspberry and plum—interwoven with hints of violets, graphite, subtle cedar and a touch of baking spice from well-judged oak. On the palate, the wine is medium to full-bodied with a polished, velvety texture and finely grained tannins. Fresh, juicy fruit sits at the core, supported by a lively, mouthwatering acidity that keeps everything lifted and precise. Notes of dark berries, crushed stones, cocoa nibs and a gentle savory undertone carry through to a long, refined finish. While crafted to be approachable in its youth after a few years in bottle, the 2023 has the structure and balance to evolve gracefully over 8–15 years, gaining complexity and softness with time.

Production
Le Carillon de l’Angélus is sourced primarily from parcels on the slopes of Saint-Émilion, where chalky limestone and clay-limestone soils lend both finesse and tension to the fruit. The blend typically favors Merlot, supported by Cabernet Franc and a small proportion of Cabernet Sauvignon, capturing the classic Right Bank profile. Grapes are harvested by hand, parcel by parcel, with rigorous sorting to ensure only perfectly ripe and healthy berries make it into the winery. Vinification takes place in temperature-controlled vats, allowing for gentle extraction to preserve aromatic purity and fine tannin structure. The wine is then aged in French oak barrels (a mix of new and second-fill) for a period carefully calibrated to enhance texture and complexity without overwhelming the natural character of the fruit.

Food & Serving
This cuvée is a versatile partner at the table, pairing beautifully with roasted lamb, beef tenderloin, duck breast, game birds, and well-seasoned pork dishes. It also shines alongside mushroom-based recipes, truffle risotto, and aged hard cheeses such as Comté or Manchego. Serve at 16–18°C (60–64°F) to highlight its aromatic detail and freshness; if the wine is very young, a gentle decant of 45–60 minutes will help open up the bouquet and soften the tannins, especially in its first few years after release.
