2023 Celler Credo VI-D-RE BIO is a strikingly pure expression of Xarel·lo from the heart of Penedès, crafted under the guiding idea that “transparency shows the way.” Conceived by Antoni Mata Casanovas, second generation of the Recaredo family, this wine is all about letting the grape and the vineyard speak with absolute clarity. Fermented, aged and sealed exclusively in glass, with no contact with any other material and no added sulfites, it is a rare, uncompromising take on natural white wine.
Tasting Notes
In the glass, VI-D-RE BIO shows a luminous pale straw to light lemon hue, with a crystalline brilliance that reflects its name and concept of transparency. The nose is finely etched and subtle rather than showy: expect delicate notes of citrus peel, green and yellow apple, fennel and fresh herbs, with hints of white flowers, almond and a faint saline-mineral edge. As it opens, more complex nuances of anise, chamomile and crushed stone start to come forward.
On the palate, this 100% Xarel·lo is dry, linear and precise, with a taut, almost crystalline texture. Fresh acidity gives the wine energy and length, while the mid-palate shows a quiet depth: orchard fruit, citrus pith, and a gentle, pithy grip from the skins, all carried on a distinctly mineral backbone. The absence of added sulfites and the glass-only élevage lends a notable sense of purity and delicacy. While it is intended primarily for early to mid-term drinking to capture its vibrancy, high-quality fruit and careful natural vinification should allow it to evolve gracefully over 3–5 years, developing more honeyed, herbal and nutty dimensions.
Production
The grapes for VI-D-RE BIO come from estate vineyards in Alt Penedès, a higher, cooler subzone of Penedès where calcareous soils and a dry-farmed regime give Xarel·lo its signature structure and mineral tension. The vines are cultivated according to certified organic and biodynamic principles, with spontaneous plant cover between rows to naturally loosen the soil, regulate water retention and drainage, and promote biodiversity in the vineyard ecosystem. Natural plant-based treatments (phytotherapy) are used instead of systemic chemicals, focusing on strengthening the vine’s own defenses and managing fungal pressure in a gentle way. All Celler Credo grapes are harvested by hand to ensure only perfectly ripe, healthy fruit reaches the cellar. Under the VI-D-RE concept, the must is fermented with indigenous yeasts and the wine is then aged and sealed exclusively in glass, without contact with wood, metal or other materials, and without any added sulfites—only the minimal amount naturally produced by the yeasts during fermentation. This highly purist approach is designed to deliver an unfiltered view of Xarel·lo and its terroir.
Food & Serving
This refined, mineral-driven white pairs beautifully with delicately prepared dishes where purity of flavor is key. Think simply grilled or lightly steamed white fish, oysters and shellfish, ceviche, sushi and sashimi, or marinated anchovies. It also works well with fresh goat’s cheese, soft-rind cheeses, seasonal vegetable dishes (asparagus, artichokes, fennel, peas) and Mediterranean salads with citrus or herbal accents. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow the subtle aromatics and texture to unfurl. A brief, gentle aeration in the glass—or a short decant of 10–15 minutes—can help the wine open up, but extended decanting is not necessary given its delicate, precise profile.
