Grapes are typically harvested by hand in small crates to preserve integrity, often requiring meticulous, labor-intensive work on the terraces. In the cellar, Bibi Graetz favors a minimally interventionist approach: gentle pressing, fermentation in barrel or a mix of barrique and neutral vessels, and extended aging on fine lees with occasional bâtonnage to build texture and complexity. Malolactic fermentation is usually avoided or carefully controlled to retain freshness, resulting in a wine that balances richness and tension, with a pronounced expression of terroir.
