Sourced from old-vine Ansonica on the tiny island of Giglio, this wine marries Mediterranean sun, sea breezes, and rocky soils into a complex, gastronomic white. Colore Bianco is produced in very limited quantities, making it a sought-after bottle for collectors and enthusiasts who value character and authenticity over volume.

Tasting Notes
In the glass, the 2023 Colore Bianco shows a bright, luminous straw-yellow color with golden reflections, hinting at both concentration and texture. The nose opens with vibrant notes of lemon zest, blood orange, and juicy apricot, layered with Mediterranean herbs, wild fennel, chamomile, and a distinct salty, sea spray character that speaks clearly of its island origin. On the palate, this is a structured, textural white with real presence. Ripe stone fruit and citrus are wrapped in a fine, savory minerality, with hints of almond, white peach, and a subtle honeyed nuance that never tips into heaviness. The acidity is taut and linear, giving the wine tension and length, while the saline finish lingers with notes of citrus peel and fresh herbs. Already impressive in its youth, the 2023 vintage has the concentration and balance to evolve beautifully over the next 5–8 years, developing more layered nuttiness, waxy texture and complexity with careful cellaring.

Production
Colore Bianco is primarily crafted from old-vine Ansonica grown on the steep, terraced vineyards of Isola del Giglio off the Tuscan coast. Here, vines dig into poor, rocky granitic soils overlooking the sea, constantly brushed by salty winds and bathed in strong sunlight, conditions that naturally limit yields and intensify flavor. Grapes are typically harvested by hand in small crates to preserve integrity, often requiring meticulous, labor-intensive work on the terraces. In the cellar, Bibi Graetz favors a minimally interventionist approach: gentle pressing, fermentation in barrel or a mix of barrique and neutral vessels, and extended aging on fine lees with occasional bâtonnage to build texture and complexity. Malolactic fermentation is usually avoided or carefully controlled to retain freshness, resulting in a wine that balances richness and tension, with a pronounced expression of terroir.

Food & Serving
The 2023 Colore Bianco is an outstanding match for refined Mediterranean cuisine and richly flavored seafood. Pair it with grilled or roasted fish (such as sea bream or turbot), shellfish, octopus, or seafood risotto, as well as dishes featuring fennel, citrus, or fresh herbs. It also works beautifully with roast chicken, veal in light sauces, or aged Tuscan pecorino and other semi-hard cheeses. Serve at around 10–12°C (50–54°F) to showcase both its aromatic lift and textural depth. A brief decant of 20–30 minutes, or simply allowing it to open slowly in the glass, helps the wine unfold its layers of fruit, spice, and minerality.
