Rosella’s Vineyard is a celebrated cool-climate site influenced by coastal breezes and fog, with well-drained soils that naturally limit yields and intensify flavor concentration in the grapes. The Chardonnay is typically hand-harvested at optimal ripeness to capture both brightness and depth, with careful sorting to ensure only the finest clusters reach the press. Bernardus is known for a Burgundian-inspired approach to Chardonnay: gentle whole-cluster or lightly crushed pressing, followed by fermentation in French oak barrels (often with a portion new) to build texture and complexity. Partial malolactic fermentation and extended lees contact add creaminess and length, while a balanced élevage preserves the wine’s acidity and site-driven character.
