Tasting Notes
In the glass, the 2023 vintage shows a bright, luminous straw-yellow color with subtle golden reflections. The nose is refined and layered, with notes of ripe citrus, white peach, toasted hazelnut, vanilla, and delicate floral undertones, supported by a discreet mineral edge. On the palate, it is creamy yet vibrant, balancing richness with fresh acidity and a precise, saline finish. The oak influence is beautifully integrated, adding texture and complexity rather than weight. While already generous in youth, Cervaro della Sala is known for evolving gracefully over time, gaining depth and nuance with several years in bottle.

Production
Produced at Castello della Sala in Umbria, the wine benefits from a terroir of ancient marine soils, cool nights, and excellent diurnal variation, all of which help preserve freshness and aromatic finesse. The grapes are carefully harvested at optimal ripeness, then vinified with meticulous attention to detail, including fermentation and maturation in oak to build structure, texture, and complexity.

Food & Serving
This wine pairs beautifully with refined dishes such as roasted poultry, lobster, scallops, creamy risottos, and truffle-based recipes. Serve it slightly chilled, around 10–12°C, to showcase both its freshness and depth. Decanting is generally not necessary, though a short period in the glass can help open up its more complex aromas.
